Dydd Gŵyl Dewi. St David's Day.  It means different things to different people, but fundamentally, it's a day where we can celebrate all that's incredible about Wales.

For us at the distillery, here on the west Wales coast, it's about the rugged cliffs and coves up and down our local shoreline; the feeling of the elements raw and unfiltered; our passion for all things Welsh: from our food to our music, our national teams to our spirits.

Toast St David's Day with a Welsh Cocktail

This time next year, we should be toasting St David's Day with our 100% Welsh Origin Single Malt Welsh Whisky - but as this liquid is still in cask for its final few months of maturation, 2025 is the opportunity to toast our patron saint of Wales with our premium Welsh gin.

Signature Style is delicious in a gin and tonic - serve it with a cube of ice, a splash of plain tonic water (to your liking) and a slice of orange - but a special day calls for a special serve and what better than the Welsh Breakfast Martini? Combining zesty citrus, tangy Welsh marmalade and a dash of Signature Style Welsh Dry Gin, we would definitely enjoy this at any time of the day on St David's Day - not just at breakfast time! The subtle botanicals of the gin already echo the flavours of traditional Welsh baking - and these shine through against a backdrop of orange and lemon.

Welsh Breakfast Martini  

(serves 1)

  • 1 tsp Welsh marmalade
  • 50ml In the Welsh Wind Signature Style Gin
  • 15ml triple sec (we used Cointreau)
  • 15ml freshly squeezed lemon juice

Method

  • Add all the ingredients to a cocktail shaker with a couple of cubes of ice
  • Shake to chill
  • Double strain into a martini glass and garnish with a slice of orange
