Not just for the solstice, but as we're approaching the longest day of the year, we thought we'd put together some of our favourite G&T serves, and a delicious cocktail idea to see you through the rest of the summer - whether you enjoy your drink quietly at home or out with friends.
Enjoy an Elderflower Gin Collins this Solstice
We can only hope that the lazy sunny days we enjoyed earlier in the year come back for the rest of the summer. While the elderflower is in bloom, it's the perfect opportunity to embrace this taste of June and incorporate it into some cocktails!

The best summer G&T serves
We have plenty of gin at In the Welsh Wind - a bottle to suit every taste. Our Signature Style is our best seller, and hot on its heels, we have the gins from the Eccentric Spirits range: Pembrokeshire Pinky, Cardiff Dry and Dewi Sant. These are all 'dry' gins, with different botanical profiles which give each a unique flavour. As a result, they each demand different garnishes. And while we do usually suggest that a plain tonic is best, we do recognise that there are some really excellent flavoured tonics out there, and some work really well with some of our gins.
Our classic serve is Signature Style: nothing needed but a cube of ice and a slice of orange - perhaps with a clove dropped in. Spritz up with a good quality, plain Indian tonic water - there's not much that can beat it!

Revel in Pembrokeshire Pinky splashed with elderflower tonic and garnished with a slice of lime.
Sip a refreshing Cardiff Dry garnished with a slice of cucumber and some black peppercorns.
Savour Dewi Sant, crisp with a squeeze of lime and some leaves of basil, clapped first to release their aroma.
