Our Wales Air Ambulance challenge is nearly upon us - and the final weekend of training - or tapering, deopending on how you want to look at it. Given that everyone is different, our final mocktail =, The Sprint Finish, also makes an incredible gin cocktail using our Signature Style dry gin so here we've included both options! What's more, you can also swap out the gin and replace it with our Three Grain Vodka - the combination works equally succesfully!
Creating a cocktail that works as well in mocktail form is not always as simple as just switching out the alcohol. In many cases, you are as well to start from scratch, and build a drink that isn't trying to replace the alcohol, but be delicious in its own right. Here, though, the serve does work well with a good non alcoholic 'gin'. We like Tanqueray 0% or a Seedlip (the spicy green one is good).
Cucumber and lime are great bedfellows especailly in the warmer months, and we've been revelling in the sunshine recently. Add in some cardamom sugar* and elderflower tonic and you've got a perfect match.
The Sprint Finish Gin (or vodka) Cocktail
{Serves 1}
6 chunks of cucumber
Half a lime
Heaped teaspoon cardamom sugar
50ml In the Welsh Wind Signature Style Gin, Three Grain Vodka or your favourite non-alcoholic replacement
Elderflower tonic
Cucumber ribbon and pink pepper corns to garnish
Method
Muddle the cucumber and lime chinks in the bottom of a cocktail shaker.
Add in the cardamom sugar and your spirit of choice.
Drop in a couple of ice cubes then shake to dissolve the sugar, combine ingredients and chill.
FIll a rocks glass with ice and double strain the liquid in over the ice.
Top with elderflower tonic and garnish with a cucumber ribbon and pink peppercorns.

*Cardamom Sugar is something we knocked up here in the distillery as it was too warm to make cardamom syrup (and we were impatient to get started!). Simply take around 50g sugar and split 5-6 green cardamom pops, scraping seeds and pods into the sugar and stirring through. The sugar very quickly takes on the cardamom scent and adds an gentle yet intriguing note to this serve.
