This limited edition of 356 bottles is the second whisky we have produced ourselves and brought to market. Distilled at In the Welsh Wind, matured here in west Wales and finished in rum casks, we are proud to continue our journey to 100% Welsh origin whisky with this release.
Each bottle is individually numbered and accompanied by a Certificate of Authenticity bearing the corresponding number to the bottle. The whisky is unboxed.
We are limiting purchases to a maximum of 2 per person.

Tasting Notes
On the Nose: Seaside vibes, and coastal freshness, tempered with a gentle smokiness. This sharpness is balanced by a fruitier sweetness, with hints of candied lemon and the delicate tartness of nectarine peel. There’s the subtle comfort of proving white bread, while oak spice adds depth, merging with the bright, juicy scent of sweet white grapes.
On the Palate: Rich and indulgent, with the warmth of freshly baked sponge cake setting the stage. There is a creamy, tropical sweetness from mellow juicy fruit, while a subtle macadamia nuttiness brings buttery, rich mouthfeel. The taste evolves with oat cakes, offering a rustic, grain flavour that balances the sweeter elements and finishes with a peppery kick from cracked white pepper, adding complexity and a subtle spice.
