The sun is shining (although for how long we can never be sure) and thoughts of cocktails spring to mind. This week, fresh from our mixologist’s bar, we bring you a honey gin old fashioned.
Cocktails are all about balance. The right combination of sweet and sour, strong and weak flavours brought together in the perfect glass. The Old Fashioned is a classic ‘spirit-forward’ cocktail sitting alongside favourites such as the Manhattan, and of course the Martini (whether you prefer it shaken or stirred). It’s one of the oldest recorded cocktails and certainly one of the most popular.
As you might guess from the name, the spirit-forward family of cocktails is all about the booze. Bourbon is the traditional spirit used in an Old Fashioned, along with sugar, bitters and ice. Stirred with ice and then strained rather than shaken to prevent dilution, this is a cocktail that has stood the test of time, and is one to savour when you’re after something rich and silky smooth.
Considering serves for our Signature Style, the Old Fashioned offers the perfect formula for something really special to showcase the spiced flavours of cinnamon and clove in the gin. Combine with spiced apple and aromatic bitters and Welsh honey, a simple spritz with an orange peel provides the finishing touch to this classic drink.
Honey Gin Old Fashioned
Our latest serve introduces In the Welsh Wind Signature Style to this classic cocktail. Along with Aromatic and apple bitters and Welsh honey for sweetness, this cocktail formula shows off the spiced elements of Signature Style’s botanical profile.
– In The Welsh Wind Signature Style Gin – 50ml
– Welsh Honey – 1 bar spoon
– Aromatic Bitters – 2 Dashes (our mixologist chose Bob’s Abbotts Bitters)
– Spiced Apple Bitters – 1 Dash (our mixologist chose Dashfire Spiced Apple Bitters)
– Orange Oils
– Orange Peel Garnish
Add the bar spoon of honey, the gin and both bitters to a mixing glass and fill with ice (large cubes melt more slowly keeping dilution to a minimum). Stir gently until the honey has dissolved, then single strain into a rocks glass filled with ice. As a final flourish, squeeze over an orange peel to release oils and spritz them into the drink#, and then garnish with more orange peel.
