Some countries celebrate their patron saints less enthusiastically than others. In Wales, St David’s Day remains a key event in the calendar. While some may have moved on from wearing traditional dress in the distillery, a St David’s Day cocktail is always a winner!
The Eccentric Spirits range has a proud Welsh history. The gins were originally inspired by a mostly forgotten Welshman – Dr William Price. While many won’t recognise his name, Dr Price was hugely influential for his time. He also spoke his mind and wasn’t afraid to tread a new path. Given Dr Price’s heritage, it was only natural that the gins in the Eccentric range would take their inspiration from the Welsh landscape, and Dewi Sant is a prime example of that. Rich herbs, fennel and spritzy citrus are key players in this gin. Dewi Sant, of course, is Welsh for St David. In this cocktail, those flavours pair with fresh mint to enhance that herbal flavour, fresh cucumber to enhance the freshness and an elderflower syrup for sweetness and that delicious flavour of the garden.
A perfect serve for raising a glass to salute our patron saint at any time of the year.
St David’s Day cocktail recipe – St David’s Garden
Eccentric Dewi Sant Gin – 50ml
Fresh Lemon Juice – 25ml
Elderflower Syrup – 15ml
Fresh Cucumber – 2 Slices
Fresh Mint – 6 Leaves
Cucumber & Mint Sprig Garnish
Method
Add the cucumber to your shaker and muddle.
Clap the mint, add to the shaker, then pour in the gin, lemon juice and syrup.
Fill shaker with ice and shake.
Double strain into your cocktail glass and garnish with a cucumber wheel and mint sprig.
