Try Madame Geneva with lemon & thyme, or with grapefruit & rosemary.
To enjoy with lemon and thyme, squeeze a wedge of lemon into a tall glass filled with ice. Pour in the Madame Geneva, then top with tonic. Clap the thyme sprig in your hands to release the bouquet and garnish. The fresh lemon matches well with the fresh flavours of crisp citrus in the gin. The fresh thyme gives the G&T a beautiful nose and is a great combination with the earthy and herbal flavour of angelica found in the gin.
For the grapefruit & rosemary option, pour the Madam Geneva into a tall glass filled with ice, then top with grapefruit tonic. Clap the rosemary sprig in your hands to release the bouquet and garnish. The fresh rosemary gives the G&T an incredible bouquet and helps bring out the herbal flavours from the angelica in the gin. The grapefruit tonic is a great match as it combines with the bittersweet flavour of the wild sunflower and fresh citrus found in the gin.

Eccentric Spirits moved production from the Eccentric Gin Co in Caerphilly to In the Welsh Wind Distillery in March 2020 and has been thoughtfully rebranded, bringing new purpose to this range of Welsh spirits.
