Enjoy Young Tom with either a sprig of rosemary, or bitter spiced lemon.
For the Rosemary option, simply pour your Young Tom into a tall glass filled with ice, then top with tonic. Clap the rosemary sprig in your hands to release the bouquet and garnish. The fresh rosemary gives a beautiful bouquet even before you've started drinking and gives a delicious herbal flavour that combines well with the sweet, floral flavours coming from the distilled IPA and fennel flavours found in the gin.
If you like the sound of bitter spiced lemon, pour the Young Tom into a tall glass filled with ice, then top with bitter lemon or lemon tonic. Squeeze some lemon peel over the top of the drink releasing the lemon oils and garnish with a star anise. The star anise flavour of the gin combines perfectly with the garnish giving a beautiful spice to the G&T. The bitter lemon/lemon tonic and lemon oils give a delicious bitter flavour, which, matched with the sweet, floral IPA flavours from the gin, gives a well-rounded finish.

Eccentric Spirits moved production from the Eccentric Gin Co in Caerphilly to In the Welsh Wind Distillery in March 2020 and has been thoughtfully rebranded, bringing new purpose to this range of Welsh spirits.
